Almond Flour Pancakes

This recipe was an experiment.  I used a hybrid of the 3 minute chocolate cake recipe and a regular pancake recipe. 

1/2 cup almond flour
1 heaping tsp of baking powder
stevia or splenda to sweeten (used stevia and splenda)
cinnamon to taste (optional)
1/4 cup melted butter
2-4 T Carb Countdown milk, half and half or cream
2 eggs

Mix all ingredients and pour enough batter on a plate to make 1 pancake and cook in the microwave for about a minute or until it's like moist cake.  Move pancake to another plate and repeat the process. 

Makes 3 pancakes.

This is the closest to regular pancakes I've ever gotten.  I really like this recipe.  The pancakes were so much like the regular ones and they taste great and have a good texture although a bit soggier than regular pancakes, but does it really matter when you're going to soak them in butter and sugar free syrup anyway?
