Peanut Butter Cookies

2 cups of sugar free peanut butter
5-6 eggs
1 tsp vanilla
1 cup splenda or other sweetener to taste (I've used to stevia and they turned out not real sweet but alright)
Russel Stover's sugar free tid bits (optional)

Preheat oven to 350.  Line a cookie sheet with parchment paper.  Mix all ingredients real well and roll out 2" balls and press with fork.  Bake for about 20 minutes.  Let cool until not crumbly.

Marinara Sauce

This isn't an exact recipe, I made it up as I went along and didn't measure anything.  I recommend tasting it often to get the right amounts of everything, when it tastes good to you.

1 small can tomato paste
some water (add water and or oil to reach a desired consistency/concentration)
some olive oil (I used about a tablespoon but you could use more)
I put a little vinegar but I don't think it really helped anything
a little bit of lemon juice (maybe a tablespoon)
a few pats of butter (I just love butter in tomato based sauces!)
chopped onion (for chopped veggies just put in as much as you want)
chopped garlic
chopped mushrooms
chopped fresh tomato
onion salt
garlic salt
a packet or two of stevia or splenda
garlic powder (for herbs, just  sprinkle a little at a time, tasting and adding more if necessary)
onion powder
basil
oregano
thyme
celery seed
cilantro
bay leaf
parsley
marjoram

Caramel

*These measurements are not exact, I really just guess at the amounts of ingredients to add
1/4 cup erythritol
1/4 water
2 tablespoons almond milk or cream
2 tablespoons of butter

Combine all ingredients in saucepan and allow erythritol to completely dissolve.  Use a pastry brush dipped in water to clean off any grains of erythritol off the sides of the pan.  After all the erythritol is dissolved, let the mixtue boil until it reaches a golden to amber color.  Pour into dish (something that can withstand extreme heat) and let cool then cut into peices. 

Old Shake/Smoothie Recipe

Several icecubes
Pour in about a 1/4 cup or less of cream (I tried this recipe without the cream and it still turned out good)
Put in about a tablespoon of cocoa powder
Vanilla to taste
Stevia to sweeten

Put ingredients in the blender and blend until all ice is ground up.

You can do many variations with this recipe, I've also made chocolate peanut butter (using the natural kind) and mocha.  They're all really good. For the peanut butter just add a tablespoon of natural peanut butter.  For mocha add 1/4 cup coffee or a tsp or so of instant coffee granules.

New Shake/Smoothie Recipe

Several ice cubes
1/2 cup Carb Countdown Milk
1/2 scoop of whey protein if you have it, it makes the shake a lot thicker
Vanilla to taste
Stevia to sweeten
Variations:
          1 tsp of cocoa
          1 tsp of instant coffee granules
          1 tblsp peanut butter
          3-4 strawberries or small amount of other fruit

Grind everything up in a blender!

Chocolate Dip

1 teaspoon of grated baking chocoate or 1/8-1/4 tsp cocoa
1 Tablespoon of cream cheese
1/2 teaspoon butter
sweetener to taste

Put chocolate in small bowl and microwave for 25 seconds or until melted (it might not all be melted but if some is, just try stirring it around till it all melts).  Put in cream cheese and microwave for 10 seconds (if you microwave cream cheese too long it will explode!).  Stir in butter and sweetener. 

You can use this to dip strawberries, nuts, pork rinds or anything else you want in.

Bruschetta
I don't really have exact measurements, I just used the basic ingredients and added some of my own and didn't really measure out the seasonings, just tried to get it to taste right.  This is pretty good for a pizza/pasta sauce. 

2 large tomatoes
1/2 onion chopped
1 garlic clove smashed or chopped
1/4 cup oil
2 tablespoons butter -optional
a splash or two of vinegar
seasonings to taste: garlic powder
                                              onion powder
                                              oregano
                                              parsley
                                              basil
                                              celery seed
                                              bay leaf
                                             
Blend all ingredients in blender and simmer for an hour.  This would probably be good raw too but I figure cooking will bring out and help blend the flavors. 

Special Sauce

1/4 cup mayonnaise
1 Tablespoon mustard
1 1/5 Tablespoon ketchup

Just whisk or mix together.  I love this on all my meats, it's terrific!  You could even try adding seasonings to it.

Pudding

Ingredients:

1 1/4 cup water
1 cup heavy cream
1 tsp xanthan or other gum
1 tsp vanilla
1 Tblsp cocoa powder (omit for vanilla or substitute with other flavoring)

Directions:

Combine all but the gum.  Put about a 1/4 cup of the mixture into a saucepan and heat.  Whisk in small amounts of the xanthan gum at a time and keep whisking until smooth add rest of cream in 1/4 cup increments whisking after each until all smooth.  Add more gum if necessary to reach desired consistency.

Cinnamon Buttercream Souffle

This is an experimental recipe so it's not perfected

1 egg, seperated
2 tablespoons of butter
2 tablespoons of whipped cream
1 tsp cinnamon
splenda to tast (about 2 packets)

Beat eggwhite till stiff.  While you're waiting for the eggwhite to get stiff, briskly whisk the butter with the cinnamon and splenda.  Then mix in the whipped cream and yolk.  Fold mixture into beaten eggwhite.

Chicken and Jicama Taco

1/2 chicken breast cut into strips or small pieces
1 cup grated jicama
taco seasoning to taste
romaine leaf

Put a little butter or oil in preheated pan and add chicken, jicama and taco seasoning.  Cook all until desired doneness.  Put all into romaine leaf and eat like a taco.  You could also make a taco shell out of cheese by microwaving cheese for a minute and a half then fold while still pliable.

Breakfast Souffle

2 eggs, seperated
chopped veggies of choice (I used spinach and eggplant)
seasonings of choice (I used onion and garlic powder and pepper)

Beat eggwhites till stiff.  While beating whites, chop the veggies and mix seasonings with yolks.  Fold yolk mixture and veggies into the beaten eggwhites. 

You may want to add some almond flour or ground pork rinds to the whipped egg whites.  This will help give it more structure which this recipe needed.

Hot Almond Meal

Not for induction but a great breakfast alternative to eggs and bacon!  I just made 2 different kinds today, cinnamon and cranberry. 

I used the unsiftable almond meal I've been saving up in the freezer and put it a pan with some cream and butter till it was the consistency of oatmeal (it does thicken up).  I used 3/4 cup of almond meal and divided it between into 2 different pans to make both kinds.  Before dividing the mixture, I added about a half cup of cream and about a 1/3 cup of butter.

For the cinnamon flavored meal (which is my favorite) simply add however much cinnamon you like, some brown sugar twin and that's it! 

For cranberry, just take several cranberries and cut them into small peices or however big you want and put them in there with splenda to sweeten and just a little bit of orange extract (I used maybe a drop for one serving). 

These are very very good and remind me of oatmeal or maltomeal.  They are however very calorie dense being that they consist of nuts, cream and butter.

Pork Rind Dip

Ground beef
Cheese
Salsa (store bought has 2-5 carbs per 2 tablespoons, so watch the salsa!)
Olives

cook meat, melt cheese and mix all ingredients!

Tangy Italian Meatloaf

1 pound ground beef
1 egg
1/2 8-ounce can of tomato sauce
Spice packet from Tangy Italian Spaghetti Dinner
Can of mushrooms
2 Tablespoons of butter-optional (I used to always add butter to the spagetti dinner sauce so I do it for the meatloaf, but it's not necessary)

Note: You could pour the other half of the tomato sauce over the top of the meatloaf, in which case you might want to mix the tomato sauce and spices before adding all the spice to the meat mixture so you can have the spice mix in the topping as well unless you want more of the spice mix in the meat.

Mix meat, egg, half of tomato sauce, spice mix, chopped veggies of your choice and butter if you choose (I use an electric mixer). Put mixture in baking pan, pour other half of tomato sauce on meatloaf if you like and bake for about an hour.

Breakfast Veggie Burger

Steam about a cup of (of both combined) cauliflower and broccoli for a half hour to an hour.  Get out a big skillet and cook two thin meat patties for the bun.  Put the steamed veggies in the blender with butter and seasonings and 2 eggs, blend until it is like batter.  Pour in pan and cook until firm.  Put the veg/egg patty between the hamburger patties and enjoy! 

This is just one example of what you can do for the middle of the burger, you can add cheese or anything else and put lettuce, tomato and pickle, mushrooms, etc, just like a regular burger.

Chicken Quiche

2 cups cut up chicken
1 egg
1 cup chopped collards
1 cup chopped broccoli
3 oz mozerella cheese
seasonings of choice (I find that lemon pepper seasoning, garlic and onion powder are great together)
1 oz mozerella cheese
1 cup of mashed pork rinds
2-3 tablespoons of butter

Mix first 6 ingredients in baking dish.  Mix mashed pork rinds with butter and put on top, spread out evenly.  Sprinkle mozerella cheese on top, cook for 1 hour at 350.

Quick Tuna Melt Quiche

2 oz tuna
1 Tblsp mayo
1oz shredded cheese of choice
1-2 eggs
1 slice of cheese

Combine tuna, mayo, shredded cheese and egg (and any seasonings if desired; garlic/onion powder, pepper, etc.).  Cook in skillet, flipping or scrambling the mixture to cook the egg then top with cheese and let it melt over the top.  Scoop it out onto dish and enjoy! 

Meat Pockets

Make 2 thin meat patties.  Put some steamed broccoli, cauliflower and mushroom with cheese on one patty.  Lay the other patty on top of the patty with vegetable and cheese mixture and pinch the edges of the meat patties together, bake in oven until done (not sure how long to bake, I'd guess 1-15 mins at 350-this is so far an untested idea).

Buttery Chicken Sauce

1/4 cup butter
1/4 cup chicken drippings or stock
1/4 cup mayo
garlic, onion powder, white & black pepper to taste

Mix all together and use for a dip/condiment.  Excellent substitute for ketchup!

Peanut Butter Sauce

1/4 cup peanut butter
1/4 cup butter
1/4 cup cream/half & half/whipped cream
1/4 tsp vanilla or to taste
sweetener to taste

Mix all together and use as a dessert dip or topping.  If you don't want to use peanut butter, you can try using some other nut butter; macadamia (the lowest carb), almond (I've used almond butter with it and it's terrific), walnut, pecan, etc.

Almost Ranch Dressing

I think using a base of mayo and yogurt (I recommend Stoney Field Farm regular whole milk) and just add the seasonings to taste.

garlic powder
onion powder
garlic salt
onion salt
pepper
dill
celery seed

Chicken Pie

4 oz boneless, skinless chicken
1 egg
1/2 zucchini diced
1/2 small onion diced
slice of eggplant, diced
stalk of celery, diced
shredded cheese

Cut chicken into pieces and put in blender with egg and puree.  Put in baking dish and mix rest of ingredients into batter and top with more cheese if desired.  Bake at 350 for about 40-45 minutes.  

Taco Seasoning (can't remember where I got this)

1 T onion powder
2 tsp chili powder
1 tsp garlic powder
1 tsp cumin          
1/2 tsp paprika
1/2 tsp salt (opt)

Fajita Seasoning

2 t chili powder
1 t salt
1 t paprika
1 t/packet splenda
1/2 t onion powder
1/4 t garlic powder
1/4 t cumin
14 t cayenne pepper
-----------------------------------------------------------------------------------------------

Snack Ideas-Make sure you keep track of carbs, most of these snacks do have carbs!

The simpler and more natural your low carb diet the better, but for those of you who are compulsive snackers like me and/or you are surrounded by temptations you can't do anything about because you live with others, you may need snacks to deter you.

Pork Rinds
Nuts (macadamias are preferable in my book because they are lower in carbs-1 net/serv.)
Berries
Jello (3 carbs/serv.)
Whipped Cream (Use for topping or to make ice cream or anything your imagination allows)
Cheese (1 carb/ounce-bout a 1" cube)

*If you ate one serving of all the above (let's say 1/2 c for the whipped cream in the form of ice cream and 1/4 c for the berries), it would add up to ~15.  Ideally you should get most of your carbs from low carb, low glycemic veggies. That gives you an idea of how snack food carbs can add up, so watch out for that.  If you eat something out of a bag or jar, measure out 1 serving and put away the rest, this will help you stay at one serving and avoid going through a whole jar of macadamias or pork rinds in one sitting (as I have often done).

Cinnamon Crisps

These are incredible!  Melt some butter in a small bowl (Land O' Lakes is the best real butter I've found) till liquid.  Take a zip lock bag and put about a teaspoon of cinnamon and a teaspoon of splenda (or however u want to do it, I just sprinkle both in there until it looks like enough and tastes good).  Dip pork rinds in melted butter and scrape off excess, then put in bag and shake up real good, enjoy! 

Turnip/Radish Chips and Fries

Turnips and radishes have been used for potato substitutes.  Turnips are higher in carbs however.  Radishes are very very low carb.  Daikon is a chinese radish that is long and white. I like to grate them up and add them to omeletts or other foods.   They also make good "hash browns".  Just make sure you only buy daikon radish in the winter because, as I found out the hard way, they are disgustingly bitter in the summer!

For mashed "potatoes" you can boil the radishes/turnips until soft and cream them in an electric mixer with whatever you want to add (butter, seasonings). 

You may want to try grating turnips and frying it like hashbrowns.  I haven't tried this myself yet, but I plan to.


This is a root vegetable that tastes like a cross between an apple and a potato.  I've made fries, chips (frying works best, the chips were wonderful sprinkled with cinnamon) and hashbrowns out of it so far and I LOVE it! This root vegetable is very low in carbs and it you're doing Atkins, you can have it on induction.  I highly recommend Jicama!
